Pesto Egg Muffins

Sometimes eggs are just the best thing you can have in the morning. But of course we want to try and be healthy, so we like going this route. Check it out:

IngredientsΒ 

  • 6 eggs
  • 1 green onion
  • 4 slices of Chorizo Salami or Dry Salami (we go the fancy route, Chorizo!)
  • 3 oz of Cheese (we used goat cheese)
  • 1 tablespoon of California Sun Dry Pesto
  • Salt and Pepper to taste

Directions

  1. Preheat oven to 350 degrees F
  2. Chop up those onions and that salami, resist the urge to eat the ingredients (lol)
  3. Whisk the eggs together with the seasoning and the pesto, add cheese and all other ingredients together
    1. Side note : don’t whisk it up too much, you’ll get better egg distribution, it looks and taste better
  4. Place batter in muffin forms, no need to grease it so long as its non-stick
  5. Bake for 15 – 20 minutes
  6. Eat those suckers like theres no tomorrow, or impress your mates
