Ingredients
- 1/4 cup of peanuts
- 1 small Sunchoke
- 2 stalks of celery
- 1 carrot
- 2 stalks of Green Onion
- 2 tablespoons of Sesame Oil
- 1 package of @housefoodsamerica Terriyaki Tofu
- 2 tablespoons of Szechuan Sauce
- 2 cups of cold water and a tablespoon of ponzu in a mixing bowl
- 2 teaspoons of cornstarch, optional
Steps
- Dice up tofu and put in pan to fry with sesame oil, peanuts and green onions
- Using a mandolin, on #2 grade slice up sunchoke, celery and carrots into the mixing bowl of water and ponzu
- Let sit in fridge while you continue
- Darken tofu and peanuts, then add Szechuan sauce and all sliced vegetables while reserving water and ponzu mixture
- In the water ponzu mixture, add cornstarch and mix well
- Once the vegetables have cooked down and browned up, add in the water ponzu cornstarch mixture and stir well
- It may look watery, cook uncovered until it starts to make thicker bubbles
- Once the bubbles are thicker, turn off heat, and serve
